I don’t know about you, but I absolutely love waffles. So much, I would not only eat them for breakfast, but also make them for strangers at 2am in the morning!

What I love about waffles is that there are many variations on how to make them. I usually like mine crisp on the outside and chewy in the middle. Add grilled banana, maple syrup, whipped cream and hazelnut spread and you have yourself one delicious breakfast!

So when I heard that a new waffle pop up truck had just opened up on Elliot Street in Auckland CBD, I was very excited.

Waffle Supreme is owned and operated by Andrew Graham, a superyacht chef who has just returned from overseas. When he was young, he came across the ‘Liège waffle’ while in France. Made from a brioche batter and caramelised with Belgian pearl sugar, these waffles look and sound delicious. A Liège waffle from Waffle Supreme costs $4 and is best eaten on its own, however you can opt to have hot chocolate sauce on top ($2 extra) to add some extra sweetness.

Also served are traditional ‘Brussels waffles’, which are made with buttermilk. These are priced at $8 and accompanied with a variety of delicious toppings, such as cream cheese, golden syrup and a Dutch biscuit spread, known as ‘Ginger Kiss’ or maple custard with walnuts, known as ‘The Lumber Man’.

If you prefer savoury to sweet, then don’t fear, an option to have a ‘Brussels waffle’ topped with a fried egg and streaky bacon will hit the spot!

My sister and I ventured into town last Sunday afternoon for lunch. I ordered ‘The Lumber Man’ waffle, which was sweet and delicious. The maple custard was perfect. My sister opted for the savoury waffle with a fried egg and streaky bacon. She loved it! Luckily, I got to try some – heaven in your mouth! The waffles themselves were crispy, but chewy in the middle – just how they should be!
