Interview: The Engine Room's Natalia Schamroth and Carl Koppenhagen
And now The Engine Room is now in book form. I have to be honest and say that the first thing I did was check if the soufflé menu is in there… and it is! I can't believe you're giving it away!

Natalia

It's all about sharing! These are our interpretations of these recipes. You could find a goat's cheese soufflé recipe in another book. But it won't be exactly the same as a Engine Room soufflé.

Carl

And knowing the recipe won't stop you from coming to The Engine Room. You can't beat sitting in the restaurant and being in the moment. But you can make it at home, and that's what we've always wanted people to be able to do.

Churrios - surely the best dessert out!

I can't wait to get the cookbook all scruffy and dirty

Carl

That's what we wanted originally but we were told we needed a dust cover! But they should definitely be well-used and scruffed up!

What's the plan from hereon in, now that you've given away all your secrets?

Natalia

It's not all of them! There's plenty more where that came from!

Carl

There's recipes that didn't make it into the book. A book is always a year behind it's day of print, so there's even more new recipes that have come about in the last year.

And most important question for last - who cooks on your nights off?

Natalia

(laughs) KK Malaysia and Canton!
