You're not the obvious traditional baker. How did this all come about?

I've basically baked a cake every week my entire life since I was eight. I had just finished my commerce degree and I wasn't all that excited about going into a job in marketing which is what I'd planned, So I decide to make this little blog where I sold cakes that I made. All of a sudden it just took off and two and half years in it's my full-time job.
When did you realise that this was more than just a blog about cakes?

My very first job was a wedding, and from there I just started to get some big jobs from some well known companies. Fashion Week rolled around and I got a lot of orders around that for launch parties and events. Word of mouth really took off and since then I've had a lot of support from people who are interested in what I'm doing.
How have cakes changed since 'the old days'? Have they moved on from your traditional ways of making them?

I think we're losing the old traditional stuff a little. for me, I'm taking it down more of a health route. In a lot of my cakes, I'm using honey instead of sugar or ground almonds spelt flour instead of flour to make them a bit more guilt free. People are buying more healthily, buying vegan even if they're not vegan. The healthier cakes still taste really good, but I still have cakes that have a ton of chocolate and butter in them!
